Red Velvet Cupcakes





I made these Red Velvet cupcakes last week for a colleagues 40th Birthday. As she had a half day we decided to breakfast on cupcakes and bucks fizz. My other gal pal Gemma baked peanut butter and nutella cupcakes. Both cupcake recipes are from the Hummingbird Bakery cookbook. There is a branch round the corner from our work and occasionally we come back from lunch to find a cupcake on our desks! They do some exotic flavours like pineapple and coconut, marshmallow and pumpkin but I had wanted to make Red Velvet for a while. Apparently they acquired their name because old school Cocoa powder used to react with the buttermilk in the cake mix and turn it red. These days I just upend a bottle of red food colouring.

One of my life ambitions is to ice a cake using an icing bag. This would actually be quite easy to achieve. Thinking about taking my cupcakes to the next level.
