Jam Thumb Prints

These jam thumbprint biscuits don't take long and are perfect to whip up on a Wednesday night. I used a recipe from the Great British Book Of Baking but this recipe from Hugh Fearnley Whittingstall looks lovely too. I also like the way he discusses the merits of the British biscuit - quiet and unassuming yet also hearty and wholesome.

 Ooooo and do you know what? I ran out of caster sugar so I used fruit sugar, and they turned out fine! You don't need to use as much and it sounds healthy!

I was inspired to bake by this lovely book that I received as a birthday present from Lauren. It's full of recipes and tidbits of history about the culture of afternoon tea. It wont be long before the nights start drawing in and we can eat hot tea cakes and English muffins again!
