Remember: It's illegal to keep tomatoes in the fridge. They don't like it and will go all fluffy and flavourless. Because this recipe is so simple you need to use really good, firm, red, fresh little tomatoes. We get lovely organic ones dropped on our doorstep courtesy of Riverford every week. The bread is important too - I used a delicious potato and rosemary loaf from Gail's.
