Chloe Bakes: Lemony cupcakes

I've been busy baking a special cake today (which I'll be able to share with you next weekend!). I had a little cake mixture leftover so decided to bake two cupcakes for Ciaran and I as a little treat. I used a classic Victoria sponge cake recipe for the base and added plenty of lemon zest. Once the cupcakes came out of the oven I brushed them with freshly squeezed lemon juice while they were still hot. I glazed them with a simple lemon and sugar syrup and decorated with edible violet petals. I think the edible petals look so pretty and was surprised by how much flavour they had!


Aren't these plates pretty? They're a very pale green milk glass and were made by a French company called Arcopal and are pretty readily available on Ebay.
