Victoria Sandwich...



Happy Friday! On this sweet and sunny day I thought I would share a few photos of a cake I made last weekend. This two tier whoppa of a Victoria Sandwich was commissioned by local Mum Amelia for her son's 1st Birthday party! Amelia wanted a cake that looked unusual and rustic which was right up my street! She also wanted it to be light enough so that Oscar and the other children could tuck in too. After a couple of chats and some brainstorming, I suggested a layered Victoria sponge filled with strawberry jam and vanilla buttercream, decorated with fresh berries. I thought it would look lovely and spring like - perfect for this time of year when we're all craving something light and fresh!


Although these Summer berries won't be in season in England for another couple of months, the Spanish varieties are just starting to filter into the fruit and veg markets. They provided a lovely pop of colour and their scent, along with the scent of the cake, was just dreamy!



Amelia also ordered some matching cupcakes! Don't they look cute?
